  • 1 1/2 cups flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup sugar
  • zest of 2 large oranges
  • 3/4 cup milk
  • 2 tsp lemon juice
  • 1/2 cup oil
  • 2 eggs
  • 1 tbsp orange juice
  • 1/2 tsp vanilla extract
  • 1 cup frozen (Cape Cod Select) cranberries 


  1. Preheat oven to 350 and line your loaf pan with parchment paper.
  2. Combine flour, salt, baking powder and sugar into a bowl. Set aside.
  3. In a large bowl, whisk together orange zest, milk, lemon juice, oil, eggs, orange juice, and vanilla extract.
  4. Slowly add your dry ingredients into your wet ingredients.
  5. Add in your cranberries and stir until combined.
  6. Pour into your prepared loaf pan and bake for 60 minutes (or until you can insert a toothpick and it comes out clean).
  7. Allow to cool and enjoy!


** If you want to bake ahead for the holidays, you can store your bread by wrapping it in plastic wrap and storing in your freezer.
