Description

This moist and flavorful pumpkin chocolate chip banana bread combines the sweetness of ripe bananas with warm pumpkin spice and melty chocolate chips. It’s the perfect fall treat that’s easy to make and great for breakfast, snacks, or dessert. Kid-approved and freezer-friendly!


Ingredients

  • 2 overripe bananas, mashed
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1 cup brown sugar
  • 1/3 cup flour
  • 1 tbsp vanilla
  • 1.5 cups flour
  • 1 tsp baking soda
  • 1 tbsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Mix wet ingredients (and sugar) in a large bowl: bananas, pumpkin purée, eggs, brown sugar, oil, and vanilla.
  3. In a second bowl, mix dry ingredients: flour, baking soda, pumpkin pie spice, and salt.
  4. Fold the dry ingredients into the wet ingredients.
  5. Gently mix in chocolate chips.
  6. Pour into a 9×5 bread pan with parchment paper. 
  7. Sprinkle with chocolate chips, if desired.
  8. Bake for 50-60 minutes (or until you can poke with a toothpick and pull it out clean).
  9. Let rest for 15 minutes, or until cool, and enjoy!
