Description
This pumpkin pie parfait is the perfect fall dessert (or breakfast), layered with pumpkin pie filling, yogurt, and topped with a delicious Maple Sea Salt Granola.
Ingredients

- 1 can of pumpkin puree
- 2 eggs
- 1 TBSP lemon juice
- 1/4 cup of milk
- 1/2 cup pure maple syrup
- 1 TBSP pumpkin pie spice
- 1 tsp cinnamon
- 1/4 tsp salt
- 2 cups vanilla yogurt (or plain)
Toppings:
- 1/2 cup Bob’s Maple Sea Salt Granola
- maple syrup to drizzle
Instructions
- Preheat oven to 350
- Mix pumpkin purée, eggs, lemon juice, milk, maple syrup, pumpkin pie spice, cinnamon, and salt. Stir until combined.
- Pour mixture into an oven-safe dish, bake for 30 minutes, and allow to cool.
- Prep Parfaits. In your glass parfait jars, the bottom layer is the pumpkin mix, then a layer of yogurt. Repeat this pattern until your jar is full or to your liking. *Alternative Layering in Notes.
- Top parfait with Bob’s granola and a drizzle of maple syrup.

*If you prefer a crunchier parfait, your layers could be pumpkin mix, yogurt, granola, yogurt, granola.
