It’s that time of year again when the temperatures drop, the leaves fall, and we start to get warm and cozy in our homes. I don’t know about you, but this time of year tends to be one of my favorites! While spending more time inside, I get to experiment more in the kitchen. And what better way to embrace the flavors of the season than with a delightful Pumpkin Pie Parfait recipe? Today we’ll be creating a dessert (or breakfast) that captures all the essence of fall – from the aromatic spices to the comforting layers of creamy goodness. Let’s dive into the heartwarming world of autumn recipes!

What is a Parfait?

A parfait is a delicious dessert that originated in France. Traditionally, parfaits are made up of layers of various ingredients, such as yogurt, fruit, granola, and whipped cream. These eye catching desserts are often served in a glass jar to show off their beauty. The beauty of this dessert is that it an be customized to suit any taste. Although parfaits were originally created as a dessert, they are also known to be great for breakfast as well.

To embrace seasonal flavors, we’re making the star of this parfait pumpkin pie.

Pumpkin Pie Parfait

As I searched for the perfect pumpkin-pie-inspired dessert (without it being actual pumpkin pie), I found several ‘no-bake’ options. However, I felt that these strayed from the true essence of a pumpkin pie-inspired treat. I wanted an authentic pumpkin pie flavor, which is why I made the deliberate choice to bake the pumpkin puree for the parfait. This added the genuine pumpkin pie flavor I was looking for. After all, why settle for a replica when it’s effortless to recreate the real thing?

Bob’s Maple Sea Salt Granola Topping

Bob’s Granola is the perfect topping for this easy pumpkin parfait recipe. The Maple Sea Salt flavor compliments the pumpkin mix perfectly. You can find Bob’s Granola at your local Sprouts.

Bob’s Granola:

  1. Certified gluten free

Description

This pumpkin pie parfait is the perfect fall dessert (or breakfast), layered with pumpkin pie filling, yogurt, and topped with a delicious Maple Sea Salt Granola.


Ingredients

Scale
  • 1 can of pumpkin puree
  • 2 eggs
  • 1 TBSP lemon juice
  • 1/4 cup of milk
  • 1/2 cup pure maple syrup
  • 1 TBSP pumpkin pie spice
  • 1 tsp cinnamon 
  • 1/4 tsp salt
  • 2 cups vanilla yogurt (or plain)

Toppings:


Instructions

  1. Preheat oven to 350
  2. Mix pumpkin purée, eggs, lemon juice, milk, maple syrup, pumpkin pie spice, cinnamon, and salt. Stir until combined.
  3. Pour mixture into an oven-safe dish, bake for 30 minutes, and allow to cool.
  4. Prep Parfaits. In your glass parfait jars, the bottom layer is the pumpkin mix, then a layer of yogurt. Repeat this pattern until your jar is full or to your liking. *Alternative Layering in Notes.
  5. Top parfait with Bob’s granola and a drizzle of maple syrup.
  6. Enjoy!

Notes

*If you prefer a crunchier parfait, your layers could be pumpkin mix, yogurt, granola, yogurt, granola.

A Few Tips

  1. The easiest way to get the pumpkin mixture in the jar or glass is by piping it. If you don’t already have a piping bag, don’t worry, it’s so easy to make at home. Use a plastic bag and cut the corner off with scissors. The piping bag is less messy but a spoon always works too.
  2. Layering your parfait, remember, there is no WRONG way to layer a parfait. I’ve provided two examples above but you can layer your parfait any way you prefer.
  3. If you want to make your parfaits ahead of time, I recommend storing your ingredients separately until it’s time to eat.
