- 1 lb Italian sausage
- 2 tbsp olive oil
- 1 onion, chopped
- 1 carrot, shredded
- 4 garlic cloves, minced
- 3 cans (28oz each) crushed tomatoes
- 1 carton (32 oz) vegetable broth
- 1 tbsp sugar
- 2 tsp dried basil
- 2 bay leaves
- 1/2 of a 64 oz bag of cheese tortellini
- 3/4 cup of half-and-half
Topping (optional): fresh Parmesan cheese
Instructions
- In a Dutch oven or large pot, heat a drizzle of oil over medium-high heat. Add the Italian sausage, breaking it up as it cooks. Cook until it’s browned and no longer pink, about 4-5 minutes.
- Scoop out the sausage and set it aside, leaving about 1 tablespoon of the grease behind for extra flavor.
- Toss in the diced onion and carrots, and sauté until they’re tender, about 5-6 minutes. Add the garlic and cook for just a minute longer, until fragrant.
- Next, stir in the crushed tomatoes, vegetable broth, sugar, fresh basil, and bay leaves. Cover the pot and let everything simmer on low until about 15-20 minutes to allow flavors to blend.
- Add the tortellini, cover the pot again, and cook on medium-high heat for about 15 minutes, or until the pasta is tender.
- Lower the heat and stir in the half-and-half cream, making sure it’s fully mixed in for that creamy finish.
- Finally, return the cooked sausage to the pot and let it warm through.
- Don’t forget to fish out the bay leaves before serving!
- Ladle into bowls, top with freshly grated Parmesan, and enjoy every cozy bite!
