Description

This Tomato Basil Tortellini Soup with Italian Sausage is a comforting one-pot meal that’s perfect for any day of the week. Made with crushed tomatoes, vegetable broth, fresh basil, cheesy tortellini, and savory Italian sausage, it’s a rich and flavorful dish that comes together quickly and easily. Perfect for a cozy lunch or dinner, this hearty soup will warm you up from the inside out!


Ingredients

  • 1 lb Italian sausage
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 1 carrot, shredded
  • 4 garlic cloves, minced
  • 3 cans (28oz each) crushed tomatoes
  • 1 carton (32 oz) vegetable broth
  • 1 tbsp sugar
  • 2 tsp dried basil
  • 2 bay leaves
  • 1/2 of a 64 oz bag of cheese tortellini
  • 3/4 cup of half-and-half

Topping (optional): fresh Parmesan cheese


Instructions

  1. In a Dutch oven or large pot, heat a drizzle of oil over medium-high heat. Add the Italian sausage, breaking it up as it cooks. Cook until it’s browned and no longer pink, about 4-5 minutes.
  2. Scoop out the sausage and set it aside, leaving about 1 tablespoon of the grease behind for extra flavor.
  3. Toss in the diced onion and carrots, and sauté until they’re tender, about 5-6 minutes. Add the garlic and cook for just a minute longer, until fragrant.
  4. Next, stir in the crushed tomatoes, vegetable broth, sugar, fresh basil, and bay leaves. Cover the pot and let everything simmer on low until about 15-20 minutes to allow flavors to blend.
  5. Add the tortellini, cover the pot again, and cook on medium-high heat for about 15 minutes, or until the pasta is tender.
  6. Lower the heat and stir in the half-and-half cream, making sure it’s fully mixed in for that creamy finish.
  7. Finally, return the cooked sausage to the pot and let it warm through.
  8. Don’t forget to fish out the bay leaves before serving!
  9. Ladle into bowls, top with freshly grated Parmesan, and enjoy every cozy bite!
