Warm up with this hearty and creamy Zuppa Toscana soup! Made with savory sausage, tender potatoes, and fresh kale, it’s the ultimate comfort food for chilly days. Perfect for family dinners or meal prepping!

- 2 lbs of Italian Sausage
- 1 white onion, chopped
- 1/4 tsp crushed red pepper
- 2 teaspoons salt
- 4 garlic cloves, minced
- 2 tbsp flour
- 4 cups chicken broth
- 3 cups whole milk
- 2 lbs russet potatoes, diced
- 4 cups of kale, or more as desired, diced
- 2 cups heavy cream
- 1 cup Parmesan cheese
- Salt & pepper to taste
Instructions
- In a Dutch oven or large soup pot, add 2 lbs of Italian sausage and onion over medium high heat. Crumble sausage while cooking. Cook for roughly 5 minutes.
- Add salt & red pepper. Continue cooking until the sausage is cooked through.
- Add garlic and sauté until fragrant.
- Drain extra grease from pot.
- Return pot to stove, over medium-high heat and stir in 2 tbsp of flour. Stir to incorporate.
- Slowly add chicken broth and continuously stir to thicken your broth.
- Add milk slowly and continuously stir to make broth.
- Add diced potatoes into your pot. Bring to a boil and then lower to a simmer, and simmer for 20 minutes (or until potatoes are tender).
- Once potatoes are tender, add kale to the soup. It may seem like a lot but the kale will wilt down.
- Add cream and stir soup mixture.
- Turn heat on low and let cook for 15 minutes to wilt kale.
- Stir in Parmesan cheese and enjoy.
