Zuppa Toscana: A Family Favorite Tradition

Zuppa Toscana has always held a special place in my heart. When I was in high school and college, my grandpa and I would often go to Olive Garden for their soup and salad, and this was always my go-to. There was something so comforting about the creamy broth, tender potatoes, and savory sausage.

Years later, when I got married, I discovered my husband loved this soup just as much as I did. That’s when I became determined to learn how to make it at home—not just to save us a trip to the restaurant, but to bring those comforting flavors and special memories to our own kitchen. Now as a mother, my oldest has found a love for Zuppa Toscana too.

Zuppa Toscana Recipe

A creamy and comforting Zuppa Toscana recipe packed with savory sausage, tender potatoes, and a hint of garlic, all simmered in a flavorful broth. Perfect for cozy family dinners or sharing with friends, this hearty soup is sure to become a favorite. Simple to make and even better the next day!

Supplies You’ll Need

  • Dutch Oven or Stock Pot: The go-to for cooking this flavorful soup.
  • Measuring Cups: For accurate ingredient portions.

  • Wooden Soup Ladle: Ideal for serving up your Zuppa Toscana.
  • Wooden Spatula: Great for breaking up the sausage as it cooks.
  • Scissors: Handy for cutting kale, or you can stick with your knife if you prefer.

Ingredients

  • 2 lbs of Italian Sausage
  • 1 white onion, chopped
  • 1/4 tsp crushed red pepper
  • 2 teaspoons salt
  • 4 garlic cloves, minced
  • 2 tbsp flour
  • 4 cups chicken broth
  • 3 cups whole milk
  • 2 lbs russet potatoes, diced
  • 4 cups of kale, or more as desired, diced
  • 2 cups heavy cream
  • 1 cup Parmesan cheese
  • Salt & pepper to taste

Step-by-Step Instructions

  1. In a Dutch oven or large soup pot, add 2 lbs of Italian sausage and onion over medium high heat. Crumble sausage while cooking. Cook for roughly 5 minutes.
  2. Add salt & red pepper. Continue cooking until the sausage is cooked through.
  3. Add garlic and sauce until fragrant.
  4. Drain extra grease from pot.
  5. Return pot to stove, over medium-high heat and stir in 2 tbsp of flour. Stir to incorporate.
  6. Slowly add chicken broth and continuously stir to thicken your broth.
  7. Add milk slowly and continuously stir to make broth.
  8. Add diced potatoes into your pot. Bring to a boil and then lower to a simmer, and simmer for 20 minutes (or until potatoes are tender).
  9. Once potatoes are tender, add kale to the soup. It may seem like a lot but the kale will wilt down.
  10. Add cream and stir soup mixture.
  11. Turn heat on low and let cook for 15 minutes to wilt kale.
  12. Stir in Parmesan cheese and enjoy.

How to Store and Reheat Zuppa Toscana

Storing

Allow the soup to cool completely before transferring it to an airtight container. Store it in the refrigerator for up to 4 days. If you’ve made a larger batch, you can also freeze Zuppa Toscana. Pour it into freezer-safe containers or heavy-duty freezer bags, leaving some room for expansion. It can be frozen for up to 3 months.

Reheating

  • From the Refrigerator: Pour the soup into a pot and warm it over medium heat, stirring occasionally, until heated through. Alternatively, you can reheat individual portions in the microwave in 1-minute increments, stirring in between, until hot.
  • From the Freezer: Thaw the soup in the refrigerator overnight. Then, reheat it on the stovetop or in the microwave as described above.

If the soup has thickened in storage, add a splash of chicken broth or water while reheating to restore its original consistency. For the best flavor, top it off with some freshly cooked bacon crumbles or a sprinkle of Parmesan before serving!
