Lucky Charms Marshmallow Treat

St. Patrick’s Day is quickly approaching and it’s a tradition in our household to make special treats around the holidays. My older two children have started learning to read the calendar and both have calendars in their rooms. As soon as March 1st hit, the talk of the house was building traps for the leprechaun and making fun St. Patrick’s Day treats.
One of my favorite treats to make with the kids are Rice Krispie treats because they are so simple and you really can’t mess them up. They’re easy to alter to fit any holiday by adding appropriately colored sprinkles and melted chocolate. I had debated making a traditional Rice Krispie treat for the kids with green dye or doing a green melted chocolate drizzle but then when we were out running errands I ran across the Lucky Charms Marshmallows which gave me an idea.
Instead of using Rice Krispies treats, why not use Lucky Charms cereal all together!
I mean who doesn’t love a magically delicious treat full of colorful marshmallows in every bite.
Ready to dive into this lucky treat?
Ingredients

- Lucky Charms. The star of the recipe is Lucky Charms cereal. You can use the traditional cereal but we opted to use the Lucky Charms St. Patrick’s Day special edition. We thought it’d make it extra fun for St. Patrick’s Day.
- Mini Marshmallows. I highly recommend using the mini marshmallows. We made this recipe a few times and the mini marshmallows work a lot better. If you already have the large marshmallows, you can use them but I like keeping a cup of the mini marshmallows out to add at the end for some fluffy, non-melted marshmallows within the treats, and you wouldn’t be able to do that with the larger marshmallows.
- Salted Butter. I prefer to use salted butter for these treat bars. You can use unsalted butter but you’ll want to add a pinch of salt if you do.
- Vanilla Extract. The vanilla balances the flavor to the marshmallows so well.
- Lucky Charms Marshmallows (optional). The kids loved when I added additional Lucky Charms Marshmallows to the top of our treats at the end. The idea of being able to see the marshmallows on top seemed to make it extra magical for them.
Step-By-Step Instructions
Step 1.
Prep a 9 inch square baking dish with parchment paper. If you do not have parchment paper, you can use cooking spray. * For thick treats, use a 9 inch square dish, or you can use a 9 inch rectangle dish for thin treats.
Step 2.
In a large saucepan, over medium heat, melt 7 tablespoons of salted butter.
Step 3.
Once the butter is melted, add mini marshmallows to your saucepan. Reserve 1 cup of mini marshmallows to use at the end.
Step 4.
Stir your marshmallows frequently to avoid burning until fully melted.
Step 5.
Once marshmallows are melted, add 1 teaspoon of vanilla extract and stir until combined.
Step 6.
Remove from heat and add 7 cups of lucky charms cereal into the melted marshmallows and stir. Then fold in 1 cup of reserved mini marshmallows.
Step 7.
Pour Lucky Charms mixture into your prepared baking pan. Use a piece of parchment paper on the top to cover and press down firmly to evenly spread the cereal mixture. Top with Lucky Charms Marshmallows to desired amount.

Step 8.
Let Lucky Charms Treat rest until firm, at least 30 minutes. Slice, serve, and enjoy!

Notes
Note 1: For thick treats, use a 9 inch square dish, or you can use a 9 inch rectangle dish for thin treats.
Note 2: If you go to slice your Lucky Charms treats and they are still sticky, they are not ready. The temperature of you kitchen will impact how long they will need to rest.
