Homemade Beef Stroganoff: A Nostalgic Family Favorite Made from Scratch

Growing up, one of my favorite meals was my mom’s hamburger helper beef stroganoff. There was something so comforting about the creamy sauce and tender noodles—it was a dish I always looked forward to.

Now that I’m a mom, I wanted to recreate that nostalgic meal for my own kids, but with a homemade twist. This from-scratch beef stroganoff recipe has all the rich, creamy goodness I loved as a child, but with fresh ingredients and even more flavor. It’s an easy, family-friendly dinner that’s sure to become a favorite in your home, too.

Homemade Beef Stroganoff Recipe

After becoming a mom, I made it a goal to learn how to make more of our meals from scratch. It’s been so rewarding for our family, and now, the majority of what we eat is homemade.

Over the years, I’ve tried several different beef stroganoff recipes, but none of them quite captured the flavor I remembered from my childhood. So, I decided to take matters into my own hands and recreate the dish myself. After a bit of trial and error, I think I’ve finally perfected it!

Beef Stroganoff Recipe

Ingredients for Beef Stroganoff

  • 1 tbsp Unsalted Butter
  • 8 oz Baby Bella Mushrooms
  • 1/2 White Onion
  • 1 lb Ground Beef
  • 2 cloves garlic, minced
  • 1/2 tsp thyme
  • 3 tbsp flour
  • 1/4 cup white cooking wine
  • 4 cups beef stock
  • 2 cups water
  • 2 tbsp Worcestershire sauce
  • 16 oz wide egg noodles
  • 1 cup sour cream

Step-by-Step Instructions for Homemade Beef Stroganoff

  1. Melt butter in a Dutch oven or large pot over medium heat.
  2. Add mushrooms and onion, cook until mushrooms are tender and brown, season with salt and pepper.
  3. Add ground beef and cook until brown, about 3-5 minutes.
  4. Stir in garlic and thyme until fragrant.
  5. Whisk in flour and stir for about one minute to coat your ground beef and mushroom mixture.
  6. Stir in wine, be sure to scrape any browned bits from the bottom of your skillet..
  7. Add beef stock, water, Worcestershire, and egg noddles. Season with salt and pepper.
  8. Bring to a boil, then cover and reduce heat to simmer until pasta is cooked to your preference, about 8-10 minutes depending on noodles.
  9. Stir in sour cream until heated through.
  10. Serve and enjoy!

  • 1 lb ground beef
  • 2 cloves glaric, minced
  • 1/2 tsp thyme
  • 3 tbsp flour
  • 1/4 white cooking wine
  • 4 cups beef stock
  • 2 cups water
  • 2 tbsp Worcestershire sauce
  • 16 oz wide egg noodles
  • 1 cup sour cream
  • salt & pepper to taste

Instructions

  1. Melt butter in a Dutch oven or large pot.
  2. Add mushrooms and onion, cook, stirring occasionally until mushrooms are tender, roughly 3-5 minutes. Season with salt and pepper to taste.
  3. Add ground beef to mixture, cook until no longer pink.
  4. Stir in garlic and thyme until fragrant, about 1 minute.
  5. Whisk in flour and coat mixture, stirring for about 1 minute.
  6. Stir in wine, scrape any brown bits on the bottom of your pot.
  7. Stir in beef stock, water, Worcestershire sauce, and egg noodles. Season with salt and pepper. Bring to a boil, then cover and reduce heat to simmer until noodles are cooked about 8 – 12 minutes.
  8. Stir in sour cream until mixed through dish and warm.
  9. Serve & enjoy!
