Crockpot Chicken Parmesan Soup (Slow Cooker)

Simply toss the ingredients into your slow cooker, let it simmer all day for the flavors to blend, and by the time dinner rolls around, you’ll have a delicious meal for the whole family.

Now that we’re deep into fall, I’m embracing all the warm and cozy dinners I can make. There’s just something about a hearty meal simmering all day that makes the house feel extra comforting (not to mention that it makes my evenings with the kids so much easier, too!).

Recently, I even started an Instagram series on “Easy Family Dinner Ideas,” So far, crockpot recipes have been the star of the show.

They’re perfect for busy days, especially with kids, and this Crockpot Chicken Parmesan Soup is no exception.

How to Make Crockpot Chicken Parmesan Soup

Crockpot Chicken Parmesan Soup

I love trying a variety of new recipes and making them “ours” by adding my own little twist. This Crockpot Chicken Parmesan Soup has become a favorite in our household.

You’ll likely already have all the ingredients you need in your pantry if you keep the staples around like I do.

Ingredients

2 lbs chicken breast
1 can, crushed tomatoes
1 tbsp, garlic
2 cups tomato sauce
2 tbsp Italian seasoning
4 cups chicken broth
1 cup Parmesan cheese (more if desired)
1 cup heaving cream
16 oz cooked rotini pasta
Salt and pepper to taste

Recipe

  1. Add the chicken breast, crushed tomatoes, garlic, tomato sauce, Italian seasoning, and chicken broth to the crockpot.
  2. Cover with lid and cook on high for 3-4 hours or low 6-8.
  3. Shred the chicken. Stir in Parmesan cheese and heavy whipping cream, and cook for 15 minutes or until well combined.
  4. Top with cooked rotini, mix well, and enjoy!

*If you’d prefer, add the rotini pasta directly to the uncooked crockpot with your Parmesan cheese and heavy whipping cream. Cook time will take roughly 30 minutes and may need additional chicken broth.

Notes

*If you’d prefer you can add the rotini pasta directly to the crockpot uncooked with your Parmesan cheese and heavy whipping cream. Cook time will take roughly 30 minutes and may need additional chicken broth.

*If you are planning extras, do not add rotini pasta into the soup mix. Keep the broth and noodles separate to avoid noodles absorbing the broth.

Storage & Reheating

Storage

Refrigerator: Once your Chicken Parmesan Soup has cooled, transfer it to an airtight container and store it in the fridge for 3-4 days.

*If you plan to have leftovers, I recommend not mixing the pasta into your soup mix and keeping them separate. This will help keep the structure of your noodles without them soaking up all the liquid.

Freezer: Place smaller servings into a freezer-safe ziplock bag for more extended storage. Label and freeze for up to 3 months.

Reheating

Microwave: To reheat a single serving, place it in a microwaveable bowl, cover with a damp paper towel, and microwave for 1-2 minutes. Stir and repeat if needed.
