This homemade cinnamon sugar pull-apart bread is made entirely from scratch. It features soft, buttery layers coated in a rich cinnamon sugar filling. Supplies You’ll Need

  • Mixing Bowl
  • Dough Whisk or Wooden Dough Mixer
  • Measuring Cups
  • Measuring Spoons
  • Rolling Pin
  • Bread Pan
  • Parchment Paper
  • Oven Mitts

Ingredients for Cinnamon Pull-Apart Bread

  • Bread Flour
  • Instant Active Dry Yeast
  • Salt
  • Warm Water
  • Olive Oil
  • Unsalted Butter
  • White Sugar
  • Brown Sugar
  • Cinnamon

Step-By-Step Instructions

  1. Mix flour, instant active yeast, salt, and warm water in a bowl. Use a dough whisk or wooden dough mixer to combine the dough. If the dough feels too dry, add more warm water. If the dough feels too wet, add more flour.
  2. Once the dough forms, lightly flour your working surface and knead your dough until elastic and smooth.
  3. Place the dough in an oiled bowl and coat both sides of the bowl. Cover with a cloth and place in a warm spot.
  4. Allow dough to rise until doubled in size, about an hour. (This time will vary depending on the temperature of your house).
  5. While the dough is rising, prepare your cinnamon sugar filling. Combine white sugar, brown sugar, and cinnamon in a bowl.
  6. Prepare your bread pan. Place a sheet of parchment paper into the pan.
  7. Once the dough has doubled in size, roll your dough into a 12×18 rectangle.
  8. Spread softened butter on the rectangle dough.
  9. Sprinkle the cinnamon sugar mixture onto your buttered dough.
  10. Slice your dough into equal squares using a pizza cutter. (Depending on how big you made your dough, it is roughly 16-20 squares. Sometimes, I’m able to do 4×4 rows and other times; I have 4×5 rows.)
  11. Stack your squares into small piles. (Do not panic if some of your topping falls off; we will add it back to the top of the load.)
  12. Arrange piles of stacked bread dough in your bread pan. Sprinkle any extra cinnamon-sugar mixture that fell off on top of the loaf.
  13. Cover and let rise for 30 minutes. 
  14. During this time, preheat your oven to 350 degrees.
  15. After 30 minutes, bake bread for 30-45 minutes. Your loaf should be dark golden brown to ensure it has cooked all through.
  16. Allow bread to cool in a pan for 20 minutes, then transfer to a wire rack and enjoy.

  • 3 cups bread flour
  • 1 packet (2 tsp) instant active yeast
  • 3/4 tsp salt
  • 1.5 cups warm water
  • 2 tbsp vegetable oil

Cinnamon Sugar Filling

  • 4 tbsp butter, softened
  • 6 tbsp white sugar
  • 3 tbsp brown sugar
  • 2 tsp ground cinnamon
