As soon as spring and summer roll around, it means it’s time to start baking all those spring favorites which tends to include various fresh fruit.
Strawberry bread is the perfect way to use up fresh strawberries and make a delicious sweet treat. This bread makes for the perfect breakfast or dessert to share with family and friends.
Things You Should Know Before You Bake
Do I have to use fresh strawberries?
I wouldn’t say you absolutely have to but it will impact the taste and cooking time of your bread.
If you want the best flavor, you’ll want to start with ripe & juicy strawberries.
How do I prevent my strawberries from sinking to the bottom?
I cut my strawberries into small pieces and haven’t had this problem. However, if you prefer larger pieces, before mixing strawberries into your batter, you can toss them in flour. This will help prevent them from sinking to the bottom.
How do I store the strawberry bread?
You can safely store strawberry bread in an airtight container or plastic wrap at room temperature.
Can I freeze the strawberry bread?
Yes, this recipe freeze best when stored in individual slices in a freezer safe bag for up to 6 months.
Can I use this bread recipe with other fruit?

Step-By-Step Instructions for Strawberry Bread
Strawberry Bread Recipe
First, preheat your oven to 350 degrees and prep your 9x5in loaf pan with parchment paper.
In a large mixing bowl, add vegetable oil, egg, lemon juice, sugar, milk, and vanilla extract. Whisk together until well combined.
In the same bowl, add flour, salt, baking powder, and cinnamon. Mix until almost combined.
Add in the chopped strawberries and mix until no visible lumps of four are seen. DO NOT OVER MIX.
Pour your batter into the prepared loaf pan. Use a spatula to spread the batter.
Top with extra strawberries.
Bake in oven for about 60 minutes.
Use a toothpick to check if loaf is done. You should be able to insert a toothpick into the cake and it come out clean, this is how you know it’s done. If cake sticks to the toothpick, continue to bake at 10 minute increments, checking with a clean toothpick.
Once loaf is done, remove from oven and allow to cool to room temperature.
Making the Glaze
In a medium-sized mixing bowl, add powdered sugar, vanilla extract, and milk. Mix with a spoon until the mix is smooth.
If your mix is too thick, add more milk until desired consistency.
If your mix is too watery, add more sugar until desired consistency.
Topping Bread with Glaze
If you have a pipping bag, pour glaze into pipping bag.
If you do not have a piping bag, pour glaze into a ziplock bag, use scissors to cut the tip of your ziplock to use as a piping bag.
Drizzle glaze over bread, allow to sit for a few minutes to harden.
Cut your loaf and enjoy.

- 1.5 cups powdered sugar

- 2–4 tbsp milk
Instructions

- In a large mixing bowl, add vegetable oil, egg, lemon juice, sugar, milk, and vanilla extract. Whisk together until well combined.
- In the same bowl, add flour, salt, baking powder, and cinnamon. Mix with a wooden spoon until almost combined.
- Add in the chopped strawberries and mix until no visible lumps of flour are seen. Do NOT over-mix.
- Pour your batter into the prepared loaf pan. Use a spatula to spread the batter.
- Top with extra strawberries (if desired).
- Bake in the oven for 60 minutes. *Toothpick test: if you can insert a toothpick into your loaf and pull it out clean, your loaf is done. If the cake sticks to the toothpick, continue to bake at 10-minute increments, re-checking with a toothpick until done.
- Once the loaf is done, remove it from the oven and cool it to room temperature before adding glaze.
MIXING THE GLAZE:
- In a medium-sized bowl, add powdered sugar, vanilla extract, and milk. Mix with a spoon until the mix is smooth. *(see note 1)
- Drizzle glaze over bread and allow to sit for a few minutes to harden.
