Crockpot Pepper Steak Recipe: A Comfort Food Favorite

Growing up my mom used to make this amazing Pepper Steak recipe. I continued making it for my friends all throughout college. It was always a hit with everyone and I still to this day have people ask me for the recipe. I decided I wanted to bring back my favorite childhood meal with a little twist, a crockpot meal.
This Pepper Steak recipe leans toward American comfort food, subtly nodding to Beef Tips and gravy, unlike the traditional Chinese versions I frequently have seen when I’ve googled for a similar recipe.
Why a Crockpot Pepper Steak Recipe?
I’ve been busy this school year with the kids and running them to and from school and their extracurricular activities. I was getting bored with some of the more traditional crockpot recipes and wanted something different but still quick. I was craving my mom’s Pepper Steak dinner but wanted a meal that would be done when I got home, rather than having to cook it while exhausted after a long day.
Inspired by her recipe, I decided to turn it into a crockpot meal. The slow-cooked pepper steak turned out incredibly tender—far superior to stove-top cooking. Trust me, it was delicious. Okay, I’ll stop raving about it now; let me share the recipe with you so you can use it for your next busy weeknight dinner.
Ingredients:
- Flank Steak: I like to buy this already cut up in strips to save time. I’ve always used fajita strips from my local grocery store but you could use any thinly sliced steak.
- Onion: I use white onion for this recipe but if you’re in a pinch, red onion could substitute too.
- Green Bell Pepper: The green bell pepper is the star of this dish “hence the name, Pepper Steak”. However, you can use any bell pepper you wish.
- Beef broth: If you don’t have beef broth on hand you can substitute water.
- Brown Gravy: The instant brown gravy packets make this recipe nice and easy. If you prefer you can also make your brown gravy from scratch.
- Mushrooms: I enjoy the taste of mushrooms in this dish which means I always add them. However, I know they aren’t everyone’s cup of tea. These are option in this dish.
How to Make the Dish
First, in a small bowl, mix beef broth (or water), with brown gravy envelope, and flour.
Place flank steak in the bottom of the crockpot, season with salt and pepper.
Next, add onions and green bell pepper on top of steak.
If you’re using mushrooms, you will add them next.
Cover with brown gravy mixture.
Cook on high for 3-4 hours or low for 6-7 hours, until steak is tender.
Serve over a bed of rice or mashed potatoes.

Ingredients
- 2 lbs of sliced flank steak
- 1 small white onion, sliced
- 1 green bell pepper, sliced
- 2 cups of beef broth or water
- 2 envelopes of brown gravy mix
- 1/2 cup flour
- OPTIONAL: Mushrooms
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- In a small bow, whisk together the beef broth (or water), brown gravy mix, and flour.
- Place the flank steak in the bottom of the crockpot, season with salt and pepper.
- Place sliced onions and green bell pepper (and mushroom, if using) on top of flank steak and pour the gravy mixture over.
- Cook on High for 3 hours or low for 6 hours, until steak if cooked through.
- Served Pepper Steak over mashed potatoes, rice, or noodles.

How to Serve
There are several ways to serve this dish and you cannot go wrong. My traditional ways to enjoy Pepper Steak is served over either a bed of rice or mashed potatoes. Both of these variations proves to bring those comfort food vibes. You could also serve this over noodles as well!
