Juicy shrimp seasoned with garlic and paprika, served over fluffy rice with crunchy cucumbers, carrots, and edamame, all topped with a creamy sriracha mayo drizzle. It’s quick to make and perfect for those warm days when you want something simple but satisfying. Customize your bowls with your favorite veggies and make it as mild or spicy as you like!

Ingredients

  • 2 lbs large Shrimp, deveined & tail off
  • Olive oil, 2 tbsp
  • Garlic
  • Paprika
  • Red Pepper Flakes
  • Salt & Pepper
  • Spicy Mayo (1/2 cup mayo with 1-2 tbsp sriracha)
  • 2 cup Jasmine Rice
  • English cucumber
  • Edamame
  • Shredded Carrots
  • Sesame Seeds
  • Avocado
  • Seaweed Flakes

Step-By-Step Instructions

  1. Cook the Rice: Add 2 cups of jasmine rice and 2 cups of water to your Instant Pot. Pressure cook on high for 4 minutes. Once done, allow the pressure to release naturally for 10 minutes before opening the lid. Fluff the rice with a fork and set aside.
  2. Prepare the Shrimp: In a small bowl, combine garlic powder, onion powder, paprika, salt, and pepper. Pat the shrimp dry with paper towels, then sprinkle the seasoning evenly over them.
  3. Cook the Shrimp: Heat 1 tablespoon of olive oil in a medium skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque. Remove from heat.
  4. Prep the Toppings: While the shrimp is cooking, slice cucumbers and avocado, and gather the edamame, shredded carrots, sesame seeds, and seaweed flakes.
  5. Make the Spicy Mayo: Prepare your spicy mayo. Set aside.
  6. Assemble the Bowls: Start with a scoop of jasmine rice in each bowl. Top with cooked shrimp, cucumbers, edamame, shredded carrots, avocado slices, sesame seeds, and seaweed flakes.

Ingredients

  • 2 lbs, shrimp, deveined and tail off

  • 1/4 tsp red pepper flakes
  • salt & pepper to taste

Spicy Mayo

  • 1/2 cup mayo
  • 12 tbsp sriracha (more or less for taste preference)

Toppings:

  • English cucumber
  • Edamame
  • Shredded Carrots
  • Sesame Seeds
  • Avocado
  • Seaweed Flakes

Instructions

Variations & Substitutions

During the summer I love making light and healthy meals. This shrimp bowl is one that you can easily swap out with other ingredients for a completely new recipe.

Add a little crunch: Sometimes in addition to the sautéed shrimp, I’ll also make shrimp tempura for a fun crispy twist. My girls love shrimp tempura and it makes them even more eager to make their bowls.

Meat Substitutions: You can easily swap out the shrimp for other meats like chicken, beef, salmon or even tofu.

Rice Substitutions: If you’re looking for something other than jasmine rice, consider brown rice, long grain rice, quinoa, cauliflower rice, or even orzo.

Looking to make this dish more kid friendly? Skip the spicy mayo. My oldest love the spicy mayo but the younger three prefer to make their bowls without the spicy mayo.

Tips for Success

  • If you’re running short on time or don’t have an instant pot for your rice, consider using Minute Rice for an even faster meal.
  • Don’t overcrowd your pan when cooking the shrimp, if needed, cook your shrimp in smaller batches.
